French Onion Soup
This ultimate version of the bistro classic is made beef broth and sweet red onions. Nothing better than that traditional bubbling crust of cheese; it’s rich, smooth, and melts easily. Yum.
Ingredients:
- One gallon Beef Broth
- 8 medium red onions
- Granulated garlic,To Taste
- Black Pepper, To taste
- Toasted Baguette bread
- Shredded mozzarella Cheese (or Aged Gruyère)
Preparation:
Peel and chop red onions. The red onions are sweeter than the yellow. That is the reason for using them. Add the onions to the beef broth. Bring mixture to a boil. Turn down to a simmer. Then add pepper and granulated garlic. I add enough garlic to just coat the top of the liquid. Let simmer for about 2 hours. Add water as needed. Ladel soup into bowl top with bread and cheese. This recipe is not traditional French onion soup and I have been scolded many times for the way that I prepare it but everyone seems to really enjoy it so I continue to prepare it this way. ENJOY!
