French Onion Soup

French OnionThis ultimate version of the bistro classic is made beef broth and sweet red onions. Nothing better than that traditional bubbling crust of cheese; it’s rich, smooth, and melts easily. Yum.



  • One gallon Beef Broth
  • 8 medium red onions
  • Granulated garlic,To Taste
  • Black Pepper, To taste
  • Toasted Baguette bread
  • Shredded mozzarella Cheese (or Aged Gruyère)



Peel and chop red onions.   The red onions are sweeter than the yellow. That is the reason for using them. Add the onions to the beef broth.  Bring mixture to a boil.  Turn down to a simmer. Then add pepper and granulated garlic.  I add enough garlic to just coat the top of the liquid.  Let simmer for about 2 hours.  Add water as needed.  Ladel soup into bowl top with bread and cheese.  This recipe is not traditional French onion soup and I have been scolded many times for the way that I prepare it but everyone seems to really enjoy it so I continue to prepare it this way.
