Southern Fried Catfish and Kettle Chips
It’s football time. There’s nothing that gets the season started in the right way than the roar of a good game, and the taste of some good down home, southern style fried catfish. We have the perfect recipe just in time for kick off.
Catfish –
Washed and drained
Use ½ flour and ½ yellow corn meal as a dry mix for the coating
Lightly dredge the fish filets
Cook in clear cooking oil of your choice at 350 for 6-8 minutes or until golden
Kettle Chips –
Russet potatoes very thinly sliced
Soak overnight in fresh water to remove starches and sugars
Cook in clear cooking oil of your choice at 350 for 2-3 minutes or until golden
